Baking Tips


(Basic foundation- Cake Recipe)
1.  If you never make cake before and would like to try to make one simple butter cake. Please start with pound cake first. It is easy to make and require no baking skill. Pound cake is the basic foundation of baking the cake (base on my own experience)
2. As a beginner, there is no need to buy expensive or sophiscated baking instruments or tools, what you need is handheld mixer and oven
4. What is pound cake? Pound cake is a type of traditional cake made with one pound of each of 4 ingredients (cake flour, salted butter, eggs and sugar). In another words, the ratio of 4 ingredients is 1:1:1:1
5. So...if you like to bake one at home and like to make 1kg cake, divide 1kg=1000g by 4 ingredients that gives 250g each. You may need to add extra 10% to each ingredient due to moisture loss during baking
6. You need to add vanilla essence (weight is 3% of your flour weight) to enhance the taste and good aroma of the cake
7. Lastly, double-action baking powder (weight is 2 to 2.5% of your flour weight) for the volume and softness of the cake

 Basic Butter Pound Cake Recipe as follows:
275g Cake Flour
275g Salted Butter or margarine (you can use unsalted butter and add 2g of butter)
275g Fresh Eggs (Room temperature)
275g Fine sugar (you can use castor sugar, castor sugar makes cake slightly more softer)
8g Vanilla Essence
6g Baking powder

Cake pan used: 6" (15cm) round cake tin
Baking temperature (180degC top & bottom heat)
Baking time: 40-50 minutes (base on oven type)
