CNY Fortune Hazelnut Cookie

Hazelnut cookie with dual textures (crispy outside, and yet melting in the mouth)



Time really flies...my favourite holiday "Chinese New Year" is coming! This year,  I intend to make something different. Whilst I like crispy texture, my wife prefers those that melt in the mouth. That gives me an idea to create a fusion of two. However, when I first try out, I realised it's not that easy. I took some time to think how to combine the two different textures. Very glad that finally I managed to come up with the cookie which I'm very satisfied.  I named it 'Fortune cookies' because it resembles a gold coin packed with a whole lot of goodies all around! My family likes it so much that a container of 45 was finished up within a day!
